So what’s the secret? How do you build a restaurant that pleases its clientele time and time again?
Early Inspirations: A Sicilian Love Affair
For Fabio, his love affair with the culinary world began in the kitchens of his family’s Sicilian home. Growing up in a household where the aroma of fresh herbs and simmering sauces was a daily occurrence, he developed an early appreciation for the art of cooking. His grandmother, a formidable cook in her own right, instilled in him the importance of fresh ingredients, traditional recipes, and the joy of sharing food with loved ones. His uncle ran a restaurant and he has fond memories of this too.
This deep-rooted connection to his Sicilian heritage is evident in every dish that Fabio creates. From the moment he sets foot in the kitchen at Fliegu Restaurant, he brings a piece of his beloved Sicily to the table. His dishes burst with the flavors of sun-ripened tomatoes, fragrant basil, and rich olive oil, transporting diners to the charming streets of Sicily with every bite.
Fabio’s journey in the culinary world led him to Fliegu Restaurant, where he has proudly served as head chef for an impressive ten years. In an industry known for its rapid turnover, Fabio’s decade-long commitment to this local establishment speaks volumes about his passion, dedication, and undeniable talent. Obviously, teamwork makes a dream work and he clearly and genuinely explained, that without the support and creative freedom from those up high, and his amazing kitchen team, it wouldn’t have been a different story. “We respect each other. it’s not only about money. It’s about respect. We are a family here.” Fabio explains proudly.
Over the years, Fabio has curated a menu that reflects both his Sicilian heritage and his deep love for Gozo. His dishes are a harmonious blend of Sicilian flavors and locally sourced ingredients, resulting in a unique and unforgettable dining experience. He shared that he has friends all over the world, who are in the business, and their WhatsApp group is always busy with creating ideas, brain storming on what to try out next.
Signature Dishes: Pasta Pizza
We can’t really discuss Fabio without mentioning his masterful pizza and authentic pasta dishes. There’s plenty of choice across the island for this type of fare, but if you haven’t tried here yet – you may not need to go anywhere else. Fabio’s unwavering commitment to quality and flavor ensures that each plate that leaves his kitchen perfect.
Fabio has etched his name as a stalwart at Fliegu. His love for Sicilian cuisine, nurtured by the traditions of his family, and his team, has found a perfect canvas at Fliegu. With ten years of dedicated service, Fabio has not only showcased the flavors of Sicily and Gozo but has also become an integral part of the island’s vibrant culinary scene.
And that is why Fliegus customers return! It is why they sometimes implicity trust, and order what the chef decides, or will opt for one of their all-time favourite dishes because they know, it always delivers. At the heart of this is Fabio, the exceptional chef whose passion for Sicilian cuisine and devotion to his craft and team have earned him a special place in the hearts of all who visit.
I am a great believer in what will be, will be, and without a doubt, Fabio found his forever home – or should I say kitchen – at Fliegu.
