In the run-up to Halloween we’re having some Hulaween fun! After our day of pineapple carving here are two simple recipes to make use of the leftovers!

ANTI-INFLAMMATORY PINEAPPLE SMOOTHIE
This recipe is jam packed with nutrient dense ingredients to support the immune system. Pineapple contains high levels of bromelain, a protein digesting enzyme with potent anti-inflammatory properties. It’s especially concentrated in the pineapple core, which often gets discarded, so be sure to include all the flesh. We know turmeric for its distinctive vibrancy (and turning kitchen utensils bright yellow!) but this colour comes from curcumin, the main active compound which also gives turmeric it’s healing powers. By itself, curcumin is poorly absorbed into the bloodstream, however when combined with a pinch of black pepper and some healthy fat (we used chia seeds and coconut milk) the absorption rate is thought to increase by a staggering 2000%. To top up the goodness and immune support, we’ve added fresh ginger and parsley. Happy smoothie making for a happy tum!
What you need (1 smoothie):
- Chopping board
- Sharp knife
- Pineapple corer (not essential but makes life easier)
- Blender
- Grater
- Pineapple cut into pieces (1 cup)
- Fresh grated ginger (1 tsp)
- Powdered turmeric (1/2 tsp)
- Pinch of black pepper
- Parsley (handful)
- Chia seeds or flaxseeds (1 tbsp)
- Unsweetened coconut milk (1 cup)
How to make:
Chop ingredients and pop them in a blender! Yep that’s it! Water can be added if you find the consistency too thick. Smoothies are a great breakfast option, packed with fibre and easy on digestion.
three ingredient piña colada

What you need (1 Piña Colada):
- Chopping board
- Sharp knife
- Pineapple corer (not essential but makes life easier)
- Juicer
- Blender
- Freshy juiced pineapple or no sugar store brought version (130 ml)
- White rum (50 ml)
- Coconut cream (60 ml)
How to make:
Juice enough pineapple for 130ml, blend with rum and coconut cream and voilà! Holiday in a glass.
